Ingredients
3 cups Cooked Rice, day-old recommended
1 cup Ham, diced or roughly chopped
1/2 medium Onion, finely chopped
1 - 2 cups Roasted Vegetables, or use fresh/frozen
2 large Eggs, lightly beaten
2 Green Onions, thinly sliced
3 tbsp Soy Sauce, adjust as desired
1/4 cup Dried Cranberries
2 tbsp Vegetable Oil
Directions
Heat 1 tbsp of oil in a large skillet over medium-high heat. Add the onion and cook until softened then, stir in ham or turkey and cook until lightly browned.
Move the onion-ham or turkey mixture to one side of the skillet and add the remaining 1 tbsp of oil to the cleared side. Pour in the beaten eggs and scramble until set, then mix everything together.
Add the roasted vegetables and dried cranberries, stirring until heated through. Then add in the cooked rice, breaking up any clumps, and cook until evenly heated.
Pour the soy sauce over the rice, mixing well to coat. Taste and adjust seasoning if needed. Remove from heat and fold in the green onions. Serve hot and enjoy!
