Ingredients
1/3 cup dry red wine
1/3 cup honey
1/3 cup soy sauce
3 tablespoons Worcestershire sauce
½ cup canola or olive oil
4 green onions, chopped
3 garlic cloves, finely chopped
2 teaspoons powdered ginger
½ teaspoon pepper
2 pork tenderloins
Salt
---FOR SERVING---
3 green onions
½ cup mayonnaise
½ lemon, juiced
1 tablespoon finely grated ginger
1 teaspoon Montreal steak spice
Directions
In a large bowl or heavy-duty zip top freezer bag, combine the red wine, honey, soy sauce, Worcestershire sauce, oil, green onions, garlic, ginger, and pepper. Add in the pork tenderloins and toss to coat and submerge in the marinade. Transfer to the fridge to marinate for at least 4 hours or up to overnight.
When ready to cook, set the pork tenderloin on counter for 30 minutes to come up in temperature a bit.
If using a grill, heat it to medium heat. Brush the grill with oil, remove the pork tenderloins from the marinade, and dry them off with paper towel. Season with salt and place directly onto the grill, close the lid, and cook for 14 to 16 minutes until the internal temperature reaches 145ºF, turning the tenderloins every 2 to 3 minutes to ensure even cooking.
If cooking inside, heat your oven to 425ºF and heat a large oven-safe skillet (preferably cast iron) over medium/medium-high heat. Add a small drizzle of oil to the pan, remove the pork tenderloins from the marinade, dry them off with paper towel, season with salt, and sear until golden brown on all sides, about 2 minutes per side. Transfer the pan to the oven and roast for 10 to 15 minutes or until the internal temperature reaches 145ºF.
Remove the tenderloins from the grill or oven, loosely cover with foil, and allow them to rest for 10 minutes
While the pork rests, add the green onions to the grill or a hot skillet and cook for 3 to 5 minutes, turning frequently, until charred and softened. Finely chop the green onions and add to a bowl along with the mayonnaise, lemon juice, ginger, and steak spice. Stir well to combine and add a bit more lemon juice, ginger, or spice, to taste.
Thickly slice the pork tenderloin and serve with the sauce on the side.
