Ingredients
---FOR THE CASSEROLE---
1 head broccoli, finely chopped (about 3½ cups)
1½ cups long-grain white rice
4 boneless, skinless chicken breasts (850g), cut into bite-sized pieces
1 cup parmesan cheese, divided
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
1½ cups chicken broth
1 cup milk
---FOR THE CHEESE TOPPING---
1½ cups grated cheddar cheese
Directions
Prepare the Ingredients
Preheat the oven to 375°F (190°C).
In a 9x13-inch casserole dish, add the chopped broccoli, uncooked rice, chicken, half of the parmesan cheese, garlic powder, onion powder, salt, and black pepper.
Stir everything together so the seasonings evenly coat the chicken and rice.
Add the Liquid
Pour in the chicken broth and milk, stirring to combine all ingredients.
Cover the dish tightly with aluminum foil.
Bake Until Rice is Tender
Bake for 45-60 minutes, stirring halfway through, until the rice is tender and the chicken is fully cooked.
Remove the casserole from the oven and discard the foil.
Add the Cheesy Topping
Sprinkle the remaining parmesan cheese evenly over the casserole.
Add the grated cheddar cheese on top.
Broil for the Perfect Finish
Set the oven to broil and return the casserole to the oven. Broil for about 5 minutes, or until the cheese is melted, bubbly, and slightly golden brown around the edges.
Serve and enjoy!
Remove the casserole from the oven and let it cool for a few minutes before serving.
