Ingredients

  • 1 tbsp extra-virgin olive oil
  • 4 hot Italian sausages, casings removed
  • 2 garlic cloves, thinly sliced
  • 2 tbsp whole grain mustard
  • 2 cups 35% cream
  • 1 454g package of penne
  • Zest of 1 lemon
  • 1 bunch fresh basil, chopped
  • 1 cup grated Parmigiano-Reggiano, plus more for serving

Directions

  1. Heat a large deep frying pan over medium-high heat. Add in olive oil and sausage meat, and using a wooden spoon, begin to break apart sausage as it cooks.
  2. Once sausage is golden, crispy and cooked through, add in garlic and cook for 1-2 minutes, or until fragrant. Add in mustard and cream and bring to a simmer. Reduce heat to low.
  3. Cook pasta according to package instructions until al dente and reserve ½ cup of the cooking water.
  4. Add cooked pasta to the sauce pan, along with the reserved cooking water, lemon zest, basil and cheese. Increase heat to high, and cook for 2-3 minutes, or until sauce has thickened. Season to taste with salt and pepper. Top with more grated cheese and serve immediately.
