Ingredients
2lb shaved steak
1 white onion, diced
1 green pepper, diced
3 tbsp canola oil
Salt and pepper to taste
4 hoagie rolls
100g cheddar cheese, grated
100g provolone cheese, grated
4 tsp cornstarch
1 cup milk
1/2 cup evaporated milk
Directions
Make the cheese sauce by combining the cheese, cornstarch, milk, and evaporated milk in a pot.
Bring to a gentle boil, then reduce to a simmer and allow to thicken. Keep on low while you make the rest of the sandwiches.
In a cast iron skillet, heat the oil on high then add the steak (work in batches to avoid steaming).
Season with salt and pepper to taste, then add some of the onions and peppers, continuing to cook on high. Cook for 2-3 minutes or until deeply caramelized!
Repeat until all of the steak, onions, and peppers are cooked.
Build by loading up the steak, onions, and peppers into the hoagies then drape over with the cheese sauce!
