Ham and Lentil Soup (The Good Stuff)

Ingredients

  • 2 Tbsp vegetable oil
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 3 Tbsp tomato paste
  • 1/2 tsp dried thyme leaves
  • 1/4 tsp ground cloves
  • 1 can (540ml/19oz) lentils, drained and rinsed
  • 7 oz black forest ham, diced
  • 5 cups vegetable broth

Directions

  1. In a large pot, add vegetable oil and heat over medium-high heat. Add onion, celery, carrots and garlic. Sauté for 5 minutes or until vegetables begin to soften.
  2. Stir in the tomato paste, thyme, lentils and black forest ham. Pour in broth and bring to a boil.
  3. Once boiling, reduce heat to medium-low and simmer covered for 15 minutes or until the vegetables are fork-tender.
