Ingredients
- 2 Tbsp vegetable oil
- 1 onion, diced
- 2 stalks celery, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 3 Tbsp tomato paste
- 1/2 tsp dried thyme leaves
- 1/4 tsp ground cloves
- 1 can (540ml/19oz) lentils, drained and rinsed
- 7 oz black forest ham, diced
- 5 cups vegetable broth
Directions
- In a large pot, add vegetable oil and heat over medium-high heat. Add onion, celery, carrots and garlic. Sauté for 5 minutes or until vegetables begin to soften.
- Stir in the tomato paste, thyme, lentils and black forest ham. Pour in broth and bring to a boil.
- Once boiling, reduce heat to medium-low and simmer covered for 15 minutes or until the vegetables are fork-tender.
