Ingredients

  • 1 shrimp ring, approximately 1 lb
  • Juice of 3 limes
  • Juice of 1 lemon
  • 2 Roma tomatoes, seeded and diced
  • ½ English cucumber (peeled, seeded and diced)
  • ½ small sweet onion, finely diced
  • 1 jalapeno, seeded and minced
  • ¼ cup chopped cilantro
  • ¼ cup tomato clam juice
  • 2 tablespoons ketchup
  • Kosher salt
  • 6 tostadas
  • Cooking spray/canola oil
  • ½ cup mayonnaise
  • Sliced avocado, to garnish
  • Hot sauce, to garnish

Directions

  1. Remove the shrimp from the ring, remove their tails, and cut into bite-size pieces. Place the shrimp in a large bowl. Add the lime and lemon juice, tomatoes, cucumber, onion, jalapeno, cilantro, tomato clam juice, ketchup and salt to taste. Mix well, then refrigerate for 30 minutes.
  2. Spread a little more than a tablespoon of the mayonnaise over the base of one tostada. Top with the shrimp ceviche and garnish with the sliced avocado and hot sauce. Repeat with the remaining ceviche and tostadas.
  3. Serve immediately.
