Ingredients
1/3 cup milk
1 cup whipped cream
3 tablespoons sugar
A pod of vanilla or ½ tablespoon of vanilla paste
Cane sugar to be caramelized
5 egg yolks
Directions
In a saucepan, bring to a boil milk and whipping cream. Scrape the beans of one vanilla pod (or 1 tbsp of vanilla paste) in the cream and let it infuse for at least 10 minutes, with a lid on.
While your milk+cream is infusing, in a small bowl, whisk your egg yolks with sugar. Remove the vanilla pod from the milk, pour onto your egg yolks+sugar and whisk.
Put your ramekin in a baking pan. Transfer your crème brulee batter to ramekins. Add water in the pan to create a water bath. Bake your crème brulee in the oven at 250F for 30-35 minutes It’s important to rely on the texture of the crème brulee rather than on the baking time because every oven is different, it might take up to 40 or 45 minutes in yours. When the crème brulee is set it should neither be liquid or very firm but in between, it should be jiggly when you tap on the ramekin. Let it rest in the fridge for at least 2 hours.
Sprinkle the crème brulee with cane sugar then use a blowtorch to caramelize the sugar on top.
