Ingredients

  • 2 cups pitted green olives
  • ¾ cup walnuts, coarsely ground
  • ¼ cup finely chopped cilantro
  • ¼ cup finely chopped fresh mint
  • 2 cloves garlic, finely grated
  • ⅓ cup pomegranate molasses
  • ½ cup pomegranate juice
  • ¼ tsp kosher salt
  • ½ cup pomegranate seeds
  • Olive oil toasted baguette crostini, for serving
  • Labneh, for serving

Directions

  1. To a medium bowl add the olives, ground walnuts, cilantro, mint, garlic, pomegranate molasses, pomegranate juice, and salt. Mix well. Marinate in the fridge overnight or up to 3 days. The mixture will thicken.
  2. Gently fold in the pomegranate seeds.
  3. Serve as is. Alternatively, spread some labneh onto a baguette crostini, and topped with the marinated olives.
