Ingredients
2 cups pitted green olives
¾ cup walnuts, coarsely ground
¼ cup finely chopped cilantro
¼ cup finely chopped fresh mint
2 cloves garlic, finely grated
⅓ cup pomegranate molasses
½ cup pomegranate juice
¼ tsp kosher salt
½ cup pomegranate seeds
Olive oil toasted baguette crostini, for serving
Labneh, for serving
Directions
To a medium bowl add the olives, ground walnuts, cilantro, mint, garlic, pomegranate molasses, pomegranate juice, and salt. Mix well. Marinate in the fridge overnight or up to 3 days. The mixture will thicken.
Gently fold in the pomegranate seeds.
Serve as is. Alternatively, spread some labneh onto a baguette crostini, and topped with the marinated olives.
