Charcuterie Chip Tower

Ingredients

For the Caesar Cream:

  • ½ cup sour cream
  • ⅛ cup mayonnaise
  • ¼ cup grated parmesan
  • 1 tsp dijon mustard
  • ¾  tsp worcestershire sauce
  • ½  tsp garlic powder
  • ½  tsp onion powder
  • Juice of ¼ lemon
  • Kosher salt
  • Black pepper

To Assemble:

  • 1 bag salted kettle cooked potato chips
  • ½ cup good quality pitted green olives (Castelvetrano)
  • ½ cup sliced cacciatore salami or prosciutto
  • ½ cup whole pickled pepperoncini peppers
  • ½ cup cornichons
  • ¼ cup marinated anchovies
  • ¼ cup grated parmesan

Directions

  1. To make the caesar cream, add the sour cream, mayonnaise, grated parmesan, mustard, worcestershire sauce, garlic powder, onion powder, and lemon juice to a bowl. Season with salt and pepper to taste, and mix well.
  2. Using scissors, snip the middle of the potato chip bag, and proceed to cut around the perimeter to create an oval opening that exposes the chips inside.
  3. Dollop/drizzle some of the caesar cream over the chips. Then garnish with the olives, salami, pepperoncini, cornichons, and anchovies. Lastly, grate the parmesan over the surface.
