Ingredients
For the gochujang spread:
- 6 tbsp tomato paste
- 2 tbsp gochujang
- 1 tbsp molasses
To Assemble:
- 2 tbsp butter, at room temperature
- 4 large slices of sourdough bread
- 4 thin slices of old cheddar cheese
- 4 thinly sliced rounds of red onion, separated into rings
- ¼ cup coarsely chopped cilantro
- 1 medium tomato, cut into thin slices
Directions
- To a small bowl, add the tomato paste, gochujang, and molasses. Mix until smooth.
- Butter the outside of 2 slices of bread, then spread the inside of one slice generously with the gochujang spread (1-1.5 tbsp). Layer 1 slice of cheddar on top, followed by a few rings of red onion, a sprinkling of cilantro, a couple of sliced tomatoes, and 1 more slice of cheddar. Then top with the other slice of bread, buttered side facing up. Repeat the process to make the second sandwich.
- Place in a hot sandwich grill, and grill for 2-3 minutes or until golden and the cheese inside has melted. Alternatively, place in a dry pan on medium heat and cook for 2 minutes on each side or until golden on the outside and the cheese inside has melted.
- Cut on a diagonal before serving.
