Jumbo Cake Pops

Jumbo Cake Pops

Ingredients

  • 1 store bought or homemade cake, any flavour, unfrosted
  • 1 - 2 cups frosting, store bought or homemade, any flavour
  • 20 ounces candy melts or chocolate melting wafers
  • Fruity pebble cereal, sprinkles, mini chocolate chips, or other toppings
  • Extra long lollipop sticks or chopsticks

Directions

  1. Crumble cake into a large bowl. Mix in 1 cup frosting with a spoon or mixer on low speed until it resembles wet sand. Add more frosting if it looks too dry.
  2. Scoop ⅓-cup portions, roll into 5 – 6 inch “sausages,” and place on a parchment-lined plate. Refrigerate for at least 4 hours, or speed things up by freezing for about 30 minutes. Chilling is important—it helps the pops hold their shape when dipped.
  3. Melt candy melts or chocolate wafers in a microwave or double boiler, following the package directions.
  4. Transfer the melted coating into a tall drinking glass. Choose one taller than your cake sausages so you can dip them fully in one motion.
  5. Keep most of the chilled cake sausages in the fridge while you work, pulling out only a few at a time.
  6. Dip the tip of a lollipop stick or chopstick into the melted coating, then insert it about two-thirds of the way into a chilled cake sausage.
  7. Carefully dip the entire cake sausage into the melted coating, making sure to cover the seam where the cake and stick meet. Rotate gently to coat evenly.
  8. Lift the pop out of the glass and tap the stick lightly against the side to let excess coating drip off.
  9. Decorate with cereal, sprinkles, or toppings. Stand upright in styrofoam or a box. Let set.
  10. Store in the fridge for up to 1 week.
Deep Fried Nanaimo Bars

Deep Fried Nanaimo Bars

Ingredients

  • 2 quarts vegetable oil for frying
  • 1 cup milk
  • 1 large egg
  • 2 teaspoons vegetable oil
  • 1 cup pancake mix
  • 1 tray Nanaimo bars, chilled in the refrigerator

Directions

  1. Cut Nanaimo bars into 1 ½-inch squares. Place them in the refrigerator to chill for at least 1 hour.
  2. Heat oil in a deep fryer, large saucepan, or Dutch oven to 375°F (190°C).
  3. In a large bowl, whisk together the milk, egg, and 2 teaspoons of vegetable oil until smooth. Add the pancake mix and stir until the batter is smooth with no dry lumps.
  4. Working one at a time, dip each chilled Nanaimo bar square into the batter and carefully lower into the hot oil using a spider, spatula, or slotted spoon. Fry in batches of 4–5 pieces at a time.
  5. Cook until golden brown, about 2 minutes.
  6. Remove the fried squares and drain on a paper towel–lined plate.
  7. Serve warm or at room temperature. 
Spam Nachos

Spam Kimchi Nachos

Ingredients

  • 1 can of Spam or similar luncheon meat, chopped into 1 cm cubes
  • 1 cup of kimchi
  • 2 tablespoons chopped or crushed nori
  • 2 - 4 tablespoons mayonnaise (any variety)
  • 2 - 4 tablespoons of sriracha sauce (optional)
  • ¼ cup chopped scallions
  • 1 - 2 tablespoons toasted sesame seeds
  • 1 bag of plain tortilla chips (can use flavoured chips for extra flavour contrast)

Directions

  1. Cut Spam into cubes and fry in a pan until lightly browned.
  2. Transfer Spam to a paper towel–lined plate to drain excess oil, then set aside.
  3. Spread tortilla chips evenly on a serving platter.
  4. Top the chips with the cooked Spam and other toppings. For a heartier nacho platter, layer chips and toppings alternately.
  5. Drizzle generously with mayonnaise and sriracha.
  6. Sprinkle scallions, nori, and sesame seeds on top for extra flavour and crunch.
  7. Serve immediately while warm and crispy.
Donut Milkshake

Coffee and Donuts Milkshake

Ingredients

  • 1 cup cold brew coffee
  • 2 cups coffee ice cream (can use vanilla, chocolate, or caramel ice cream for a different flavour)
  • 2 cups chopped donuts of your choice
  • Caramel or chocolate sauce (optional)
  • Milk for adjusting consistency

For Garnish/Toppings

  • Whipped cream for topping
  • Mini donuts for garnish
  • Optional toppings: caramel or chocolate sauce drizzle, cocoa powder, toffee bits, crushed cookies, espresso beans

Directions

  1. Place all ingredients in a blender and blend until smooth.
  2. Add more cold brew or a few splashes of milk to adjust the consistency to your liking.
  3. Pour milkshake into tall glasses and garnish with whipped cream and a skewer of mini donuts or Timbits
  4. Optional: Add additional toppings like caramel or chocolate sauce drizzle, a dusting of cocoa powder, toffee bits, crushed cookies, or espresso beans.
Hot Cheeto Waffles

Hot Cheeto Waffles

Ingredients

For the Waffle

  • 1 cup crushed Hot Cheetos
  • 1 3/4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups buttermilk
  • ⅓ cup melted butter
  • 2 large eggs, beaten
  • Nonstick cooking spray

For the Toppings

  • Maple syrup or honey (can use hot honey for extra spice)
  • Whipped cream
  • Crushed Hot Cheetos

Directions

  1. In a large bowl, whisk together the flour, crushed Hot Cheetos, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate bowl, whisk together the buttermilk and melted butter. Add the eggs and whisk until smooth.
  3. Pour the buttermilk mixture into the flour mixture. Stir gently until just combined—the batter should remain slightly lumpy.
  4. Preheat your waffle iron according to the manufacturer’s instructions. Lightly coat with nonstick cooking spray.
  5. Pour enough batter into the preheated waffle iron to fill about ½ inch from the edge. Cook as directed by the manufacturer until golden and cooked through.
  6. Serve the waffles warm, topped with maple syrup or honey, whipped cream, and an extra sprinkle of crushed Hot Cheetos on top of everything.
