We often associate hearty comfort foods with winter eating, but those may not always be the healthiest options. If only there was a way to eat healthier while still satisfying those cravings!

Chef and entertaining expert Camille Arcese shared some recipes that allow us to do just that, with some warm, hearty winter salads. Not only are all of these mouth-wateringly delicious, they're also all vegetarian - so they're perfect for Meatless Monday's, or any day of the week!

Roasted cauliflower and sweet potato salad with citrus-chipotle vinaigrette

 

Who doesn't love roasted cauliflower and sweet potato? This salad features arugula as the anchor with its pepper-y bite that pairs nicely with the sweet potato and the smokiness of the charred cauliflower. Plus, it's served with a bold, spicy vinaigrette.

 

Garlic roasted root vegetable salad with cranberry and goat cheese

 

When the temperatures drop roasted root vegetables become a go-to side dish on many dinner tables, but it can also be the main attraction as a dressed-up salad with the addition of crumbled goat cheese, a herb-y dressing, and some sweet, dried cranberries.
