Vegetables are a wonderful thing! They're so versatile, and can add colour, flavour, and nutrition to any meal. Sadly, though, they almost never get the appreciation they deserve as the main star. Those poor carrots.
That's all about to change with Michelin-star chef Eric Ripert, who prepared two vegetarian recipes from his new cookbook 'Vegetable Simple' that highlight veggies in all their delicious glory. Not only that, but they're simple and easy, which makes them perfect for a healthy weeknight meal!
