Four delicious looking and tasting pies that are perfect to serve up this summer

With the first day of summer just around the corner, we need some baking inspiration! Toronto baker, Colin Asuncion has brought four of the most delicious-looking pies to help us kick start the season. 

Spinach ricotta hand pies

It’s an incredible recipe for picnics, bake sales, and summer potlucks. These could be served as an appetizer or even a main. Super decadent and rich with nice herbaceous flavours and pleasing textures.

Bumbleberry pie with bourbon whipped cream

Bumbleberry is a classic Canadian pie originally from the Maritimes. If you’re not familiar with it, it is essentially a mixed berry pie.

Matcha coconut cream tart

A twist on a classic coconut cream pie and because it’s cold-set, it’s perfect for the summer. 

Peach blueberry ginger pie 

Peaches and blueberries are in season right now, making this the perfect early summer pie. The addition of ginger adds a bit of spice and brightness to this recipe.
