March, April, and May are some of the best months for fresh produce, and we want to celebrate them! Chef Nickey Miller shares four iconic recipes from the Cake & Loaf Bakery menu that are sure to get you in the mood for warmer days.

Fresh vegetable pizza

Fresh veggies topped on this delicious homemade crust makes for the perfect pizza night at home. The result is an accessible dish, popular at parties, and a great weekday family meal.

Double chocolate mini egg sandwich cookies

These cookies have a deep chocolate base and are packed with creamy milk chocolate and crunchy candy mini eggs. Adding the fluffy vanilla buttercream, silky milk chocolate ganache, and even more mini eggs take this dessert to a whole new level. These are beautifully packaged individually as a take-home gift for your guests, and they look stunningly piled high on a serving platter. These are sandwich cookies with presence. To make irresistible mini sandwich cookies, scoop one-tablespoon portions of dough and bake for 10 minutes.

Summer berry trifle

Fresh cake trimmings layered with seasonal compotes or chocolate ganache, vanilla pastry cream, or fruit curds, and a whipped cream crown with various toppings. For some, trifle will always bring them back to their family’s dinner table; for others, it will be the first time they are enjoying the combination of different textures and flavours that make trifle a classic. Summer is bursting with seasonal goodness, and this trifle is not shy in taking advantage of all the bright, sweet and sour, flavourful, juicy summer fruits.

The cream egg brownies

This rich dessert involves a fudge brownie stuffed with a mini Cadbury creme egg, followed by two layers of whipped white chocolate ganache and topped with creamy milk chocolate. This bar does need to be set up overnight before you finish it with milk chocolate and cut it, so ensure that you have left yourself enough time. They are easiest to cut chilled just after you’ve allowed the milk chocolate layer to set, but they taste the best at room temperature, so allow them to lose their chill before serving.
