Delicious dishes using fresh Ontario Dairy

Creamy 3-Cheese Mac and Cheese



Hands-on time: 30 minutes

Makes: 6 servings
Tip: To make coarse breadcrumbs, leave a few slices of bread out overnight to dry, tear and rub between hands to create ragged crumbs roughly the size of peas.

Ingredients:

Garlic Breadcrumbs: 2 cups coarse hand-torn breadcrumbs (see tip)
4 tbsp salted butter
1/2 tsp garlic powder
3-Cheese Bechamel Sauce
1/2 cup of salted butter
1/2 cup all-purpose flour
4 cups Ontario 2% milk, warmed
2 tsp Dijon
1 clove garlic, minced
2 cups (340 grams) aged Ontario Cheddar, shredded
1 cup Ontario shredded Mozzarella
1 cup finely grated Parmesan
1/4 tsp salt
500 g dried Macaroni

  1. Butter-toasted Breadcrumbs:
    In a large non-stick skillet over medium-high heat, melt butter. Add breadcrumbs and toast, stirring constantly, until golden brown. Sprinkle with garlic powder and stir for 30 seconds more. Transfer to a plate to cool.
  2. 3-Cheese Bechamel Sauce:
    Meanwhile, in a large pot over medium heat, melt butter. Add flour and cook, whisking continuously, until a thick paste forms. Continue to cook for 1-2 minutes. Slowly whisk in milk. Add Dijon and garlic. Cook for 1-2 minutes more. Add cheese, one cup at a time, and whisk until smooth. Remove from heat. Taste and add salt, if needed.
  3. In a large pot of boiling, salted water, cook macaroni, adding 2-3 minutes to package directions. Slight overcooking will keep macaroni from absorbing moisture from the cheese sauce.
  4. Add cooked pasta to cheese sauce and mix until combined. Transfer to serving dish; top with breadcrumbs.


Crisp Napoleon with Mocha Whipped Cream 



Hands-on time: 30 minutes
Total Time:  1 hour
Makes: 8 servings
Tip: For best results, thaw frozen puff pastry in the refrigerator overnight. Keep pastry dough as cold as possible for easy handling.

Ingredients:

2 sheets 10x10 frozen butter puff pastry, thawed (See tip)
¼ cup granulated sugar
2 cups Ontario 35% whipping cream
1/3 cup granulated sugar
1 tbsp cocoa powder
2 tsp instant hazelnut coffee or espresso powder

To top:
Additional cocoa powder
Chocolate shavings

  1. Preheat oven to 400F. Line 1 extra large (or 2 regular) sheet pans with parchment paper. Cut each sheet of puff pastry in half and press into granulated sugar on both sides. Lay onto prepared baking sheets, prick pastry all over with a fork, and bake until golden brown, about 15-20 minutes. (Tip: Keep a watchful eye on pastry as it bakes to avoid burning). Allow to cool completely. (Tip: this recipe works best with three layers of pastry, so reserve the fourth piece for snacking!)
  2. In a chilled bowl of stand mixer, combine whipping cream, sugar, cocoa powder and instant coffee (or espresso powder). Slowly increasing speed, whip until stiff peaks.
  3. Assembly: Use an offset spatula to layer cream evenly, alternating between pastry and cream. Leave ¼ of cream for top. Sprinkle with additional cocoa powder and chocolate shavings to garnish. Serve immediately.


Easy Pizza Buns 




Hands-on time: 10 minutes
Total Time:  15 minutes
Makes: 12 buns

Ingredients:

12 Brioche slider buns (or small dinner rolls)
1/3 cup pizza sauce
1 cup finely shredded Ontario orange Cheddar

  1. Set oven to broil; arrange rack in middle.
  2. On parchment-lined baking sheet, arrange slider buns.
  3. Top each bun with 1 heaping tsp of pizza sauce and 1 tbsp cheddar, pushing fallen cheese toward bottom edges of buns to create crispy cheese lace.
  4. Broil until cheese is melted and bubbling, about 1-2 minutes.
  5. Allow buns to cool before serving.

    Salted Brown Sugar Whipped Cream 

Hands-on time: 5 minutes
Total Time: 5 minutes
Makes: Approximately 3 cups whipped cream

Ingredients:

Salted Brown Sugar Whipped Cream:
1 cup Ontario 35% whipping cream
1/4 cup brown sugar
1/8 tsp sea salt

  1. In a cold mixing bowl combine cream, sugar and sea salt.
  2. Whip until stiff peaks.
  3. Transfer whipped cream to a piping bag.
  4. Pipe onto Ontario chocolate ice cream for a delicious chocolate caramel-flavoured sundae!
