MANGO CRANBERRY COLESLAW

1 pack Shredded Coleslaw mix

½ Cup dried cranberry

½ Cup sugar

2 Cup Mayonnaise

1 Tsp black pepper

¼ Tsp Salt

2 Tsp. Lemon juice

½ Cup Mango Pulp

METHOD

 

•          Put Coleslaw mix in a bowl

•          Put all the other ingredients in bowl and  mix.

•          Add to Coleslaw

•          And  serve with your favorite Protein


MANGO JERK CHICKEN SKEWER


•          3lb chicken breast washed with water, vinegar, or lemon)

•          1 tsp. salt

•          2 tbsp. Cool Running’s All-purpose seasoning

•          1 ½ tbsp. Garlic Powder

•          1 ½ tbsp. Onion Powder

•          1 tsp. Black Pepper

•          6 tbsp. Walkers wood jerk seasoning

•          1 cup diced onion

•          ½ cup green onion

•          ½ tsp. Allspice

•          2 tbsp. Gravy Browning

•          ½ deseeded Scotch Bonnet Pepper

•          3 tbsp. Sugar

•          1 cup mango pulp .Bamboo skewers

•          Bell peppers large Diced (red & green

METHODS

• After you have washed your protein, drain excess water. Dice the chicken into medium to large cubes

• In a medium bowl, place the chicken and combine all ingredients. Massage the ingredients into the meat, ensuring that they’re evenly distributed to ensure consistency in taste.

• Set aside the chicken in the fridge to marinate for 1 hour. Add pices of large diced peppers to the bamboo skewers, then add the marinated chicken. You should have 3 layers on the skewers

• Heat your BBQ grill to 500 degrees. Place the skewer on the grill for 3 minutes on each side to give it a smoky flavor. Remove the chicken from the grill and place it on a baking sheet lined with parchment paper.

• Heat the oven to 375 degrees and cook the chicken for 15 minutes.

• Remove the chicken and serve it with your favorite side.

5 cups All-purpose Flour

1 cup Cornmeal

1 1/Tsp Salt

11 Tsp Baking Powder

12 Tbsp Sugar

1 Tbsp Vanilla

3 Cups Cold water

2 Cups cooking Oil (for frying Festivals)


METHOD

Combine all of the dry ingredients in a bowl

Sive Combined ingredients through with a strainer in a seperate bowl (ensure the bowl is big enough)

Add the vanilla to the water

Add mixture to dry ingredients slowly, use your hand or a cooking spoon  and gently kneed into a soft dough

 Dust  A clean flat surface with flour tear tangerine size pices from dough roll into a ball while using dust flat surface to keep dough from sticking to your hands

Press dough with your hand or a table spoon on the flat surface

In a frying Pan add oil heat to 300

Begin to add dough to the frying pan fry for 8 minutes 4 minutes per side until it becomes golden
