Happy sushi handrolls

This dish is just like sushi—without all the white rice – and checks all of the nutrition boxes. If you want to make these ahead, chop ingredients and then assemble the rolls at the last minute, as nori loses its crispness quickly.

Ingredients

  • 1 can mackerel or herring (water packed, drained well) or 3 slices of thinly sliced roast beef or 3 scrambled eggs or 1 cup sautéed mushrooms
  • 6 sheets nori (roasted seaweed) 

  • 2 oz natural pickled ginger and/or 2 oz purple sauerkraut, drained

  • 1 ripe avocado or 2 tablespoons sugar-free mayonnaise
  • 1/2 large thinly sliced bell pepper or apple
  • Sesame seeds, for garnish

Directions

  1. To make the rolls, place one nori sheet on a flat surface and place two tablespoons of the protein choice across the surface of the nori, about an inch from the bottom.
  2. Top with a tablespoon of pickled ginger or sauerkraut, two wedges of avocado or mayo, and bell pepper or apple to suit your individual taste. Garnish with sesame seeds if desired.
  3. Roll into a tight cone and serve immediately to keep the nori fresh and crispy. Enjoy!
