Savoury toast 3 ways

Ingredients

Goat Cheese, Pistachios & Cherry Jam

  • 1 baguette, sliced on the diagonal into approximately 20 pieces
  • 1 300g log goat cheese, softened
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons each of fresh mint and parsley, finely chopped
  • 1/4 teaspoon chilli flakes
  • 1/2 cup cherry jam or candied cherries
  • 1/3 cup pistachios, shelled and finely chopped
  • Pinch of kosher salt and cracked black pepper

Whipped Ricotta & Parmesan with Honey & Walnuts

  • 1 baguette, sliced on the diagonal into approximately 20 pieces
  • 1 cup ricotta, drained
  • 1/4 cup parmesan, finely grated
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/3 cup toasted walnuts, chopped
  • Runny honey
  • 1/2 orange, zested

Grilled Steak with Blue Cheese Sauce & Chives

  • 1 baguette, sliced on the diagonal into approximately 20 pieces
  • Extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 2/3 cup whole milk
  • 1/3 cup blue cheese, crumbled (Stilton or Gorgonzola work well)
  • 1 small flank steak, grilled to your likeness and thinly sliced
  • Chives, chopped

Directions

Goat Cheese, Pistachios & Cherry Jam

  1. Preheat oven to 450°F and arrange the baguette slices on a rimmed baking sheet, and brush both sides with oil. Toast for seven to eight minutes or until your desired toasty-ness. Remove and set aside.
  2. To make the goat cheese topping, add goat cheese, olive oil, herbs, and chili flakes to a mixing bowl and gently mix until combined.
  3. To assemble, smear a generous amount of the goat cheese onto the toasted baguette slices and top with a dollop of cherry jam or cherries, a sprinkling of pistachios, and top with a pinch of kosher salt and cracked black pepper. Enjoy! 

Whipped Ricotta & Parmesan with Honey & Walnuts 

  1. Preheat oven to 450°F and arrange the baguette slices on a rimmed baking sheet, and brush both sides with oil. Toast for seven to eight minutes or until your desired toasty-ness. Remove and set aside.
  2. To make the whipped ricotta and parmesan, add cheese, olive oil, and salt to a bowl and whisk until well combined and smooth. 
  3. To assemble, spread or pipe the cheese onto the toasted baguette, sprinkle with walnuts, drizzle with honey and finish with a bit of orange zest. Enjoy! 

Grilled Steak with Blue Cheese Sauce & Chives 

  1. Preheat oven to 450°F and arrange the baguette slices on a rimmed baking sheet, and brush both sides with oil. Toast for seven to eight minutes or until your desired toasty-ness. Remove and set aside.
  2. To make the blue cheese sauce, melt butter in a small saucepan over medium-high heat. Add flour and whisk to combine. Let the mixture cook for approximately one minute. Slowly pour in the milk while continuing to whisk. Bring the mixture to a simmer and add the cheese. Continue to whisk until the cheese has melted and the sauce has come together and is smooth. Set aside.
  3. To assemble, place a few pieces of steak onto the toasted baguette and top with blue cheese sauce and chive. Enjoy!
