French toast

This is a built-in hunger-crushing combo because it has fibre, protein and healthy fats. Add in your favourite frozen or fresh berries or diced fruit, and your favourite nuts or nut butter.

Ingredients
- 1 teaspoon butter
- 3 tablespoons milk (dairy free or dairy)
- 1 teaspoon maple syrup
- 1/4 teaspoon cinnamon
- 1/4 teapoon vanilla
- Small pinch each of salt and nutmeg
- 1 large egg, beaten
- 1 cup diced whole grain bread
- 2 tablespoons sliced toasted almonds
- Fresh berries, dollop of Greek yogurt, sliced toasted almonds and maple syrup, optional toppings
Directions
- Add butter to a large microwave-safe mug and microwave for 20 seconds until melted.
- Whisk in the milk, syrup, spices, vanilla, and egg until combined.
- Add in the whole-grain bread and almonds and push them into the egg mixture until the bread is saturated. Let sit for one minute.
- Microwave on high for 60 to 90 seconds until the French toast is firm.
- Top with a dollop of Greek yogurt, berries, almonds, and maple syrup. Enjoy!
