Mini egg pancake bites

You can’t really have a breakfast spread without pancakes! This has to be one of the easiest ways to make them since you don’t have the stress of executing the perfect flip. What’s even better is that adding your favourite flavours and toppings also becomes way more manageable.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 1/2 cups milk
  • 1/4 cup melted butter
  • 1 cup crushed/chopped mini eggs (Keep some whole for added festive touches)

Directions

  1. Preheat the oven to 350°F. Spray a mini muffin pan with non-stick cooking spray.
  2. Add all-purpose flour, baking powder, baking soda, granulated sugar, salt, eggs, milk, and melted butter to a bowl and mix together.
  3. Spoon the batter into each mini muffin pan about three-quarters full.
  4. Sprinkle on your mini eggs. 
  5. Bake for 15 to 18 minutes or until muffins are golden brown and the toothpick comes out clean when poked through the center. Let cool for five minutes in the pan, and serve while still warm. Enjoy!
