Shave raw asparagus to create this delish spring-inspired salad.

Ingredients
- 1lb asparagus, shaved with a vegetable peeler
- 2 shallots, finely sliced
- 1/2 head radicchio, chopped
- 1 cup baby kale
- 1 cup walnuts, toasted and chopped
- 1/2 cup Grana Padano, shaved
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- Salt and black pepper, to taste
Directions
- Add the shaved asparagus, shallots, radicchio, and kale to a large salad bowl.
- In a mason jar, add the lemon juice, olive oil, honey, Dijon, and salt and pepper (or can be whisked in a bowl). Shake vigorously to emulsify, then drizzle along the outer rim of the bowl.
- Toss salad gently to combine and evenly dress the salad.
- Transfer to your platter and top with the chopped walnuts and shaved Grana Padano. Enjoy!
