Shave raw asparagus to create this delish spring-inspired salad.

Ingredients
1lb asparagus, shaved with a vegetable peeler
2 shallots, finely sliced
1/2 head radicchio, chopped
1 cup baby kale
1 cup walnuts, toasted and chopped
1/2 cup Grana Padano, shaved
2 tablespoons lemon juice
1/4 cup olive oil
1 tablespoon honey
1 tablespoon Dijon mustard
Salt and black pepper, to taste
Directions
Add the shaved asparagus, shallots, radicchio, and kale to a large salad bowl.
In a mason jar, add the lemon juice, olive oil, honey, Dijon, and salt and pepper (or can be whisked in a bowl). Shake vigorously to emulsify, then drizzle along the outer rim of the bowl.
Toss salad gently to combine and evenly dress the salad.
Transfer to your platter and top with the chopped walnuts and shaved Grana Padano. Enjoy!
