Ingredients
2 Yukon gold potatoes
500g ‘’00’’ flour
1 tablespoon salt
1 bag instant yeast
250 ml warm water
1 teaspoon sugar
2 tablespoons olive oil
1 large yellow bell pepper thinly sliced
Long strands of chives for flower stems
1 pint cherry tomatoes for decorative flowers
1 container fresh basil for flower leaves
Fresh rosemary sprigs for the center of the flowers
Green olive slices for extras
Directions
Peel and cube the potatoes. Place into a pot of cold water. Bring to a boil and cook until it is fork-tender. Mash the potatoes until roughly mashed (not smooth), and reserve.
In a bowl add the yeast, warm water, and sugar. Dissolve the yeast and sugar using your fingers.
In a stand mixer using the kneading attachment add the flour and the salt. Then the potato, water, yeast mixture, and olive oil. Turn the mixer on low and combine the ingredients. Then turn it on to medium speed and knead for five to seven minutes.
Put oil on your hands and scrape the dough off the sides of the bowl. Then cover with plastic wrap and a tea towel and allow to rise in a warm place for one hour to an hour and a half.
In a large pan put avocado oil to coat the bottom generously. Lay out the dough into the pan and top with the ingredients to make what looks like a canvas! Be as creative as you wish. Then add additional olive oil, and season with salt.
Preheat the oven to 425° F, once it reaches the temperature then lower the oven to 400° F and bake for 30 to 35 minutes until cooked through and golden brown. Serve and enjoy!
