Ingredients
5-6 cups Brussel sprouts, quartered
1 yellow onion, diced
1 apple, diced
2 garlic cloves, minced
4 sausages, removed from casings
Directions
Toss quartered Brussels sprouts in olive oil in a bowl and season with salt. Toss Brussels sprouts onto a baking sheet and back for 25 to 30 minutes or until deep golden brown.
While the Brussels sprouts are baking, place a lightly oiled pan over medium heat, and drop in the onions, garlic, and apples once the temperature reaches. Saute for five minutes while stirring occasionally. You don’t want the onions to take on any colour; you want to sweat them out.
After five minutes, move the onion and apple mixture to one side of the pan and add in the sausage meat removed. Brown the sausage meat, and then you can turn off the heat.
Once the Brussels sprouts are roasted, mix the sausage-apple mixture with the Brussels sprouts. Season to taste and enjoy!
