Red Velvet Cupcakes

Get Halloween-ready with these vampire-inspired cupcakes that are to die for.

Ingredients

Red Velvet Cupcakes

  • 3/4 cup sugar
  • 1/2 cup canola oil
  • 1 egg
  • 1/2 cup plain yogurt
  • 1 tablespoon red food colouring
  • 1/2 teaspoon white vinegar
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup brick style cream cheese
  • 1/2 cup butter, room temperature
  • 2 to 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Vampire Cupcakes

  • 1 cup frozen raspberries, thawed
  • 1/4 cup powdered sugar

Spiderweb Cupcakes

  • 1/2 cup semi-sweet chocolate chips, melted

Skeleton Cupcakes

  • Chocolate or Halloween sprinkles
  • Lollypop sticks
  • Yogurt covered pretzels
  • Marshmallows
  • Black edible marker, optional

Directions

Red Velvet Cupcakes 

  1. Heat your oven to 375°F and line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, beat together the sugar, oil, and egg. Beat in yogurt, food colouring, vinegar, and vanilla. 
  3. Whisk together flour, cocoa, baking powder, baking soda, and salt in a separate bowl. Add dry ingredients to wet ingredients and mix until just combined. Divide batter into the prepared muffin tin.
  4. Bake for 22 to 25 minutes or until a toothpick inserted into the centre of the cupcakes comes out clean. Transfer to a cooling rack to cool completely.
  5. For the frosting, beat together the cream cheese and butter until smooth. Add the powdered sugar, about half a cup at a time, until the frosting reaches your desired consistency. Beat in the vanilla. 
  6. Spread of pipe the buttercream onto the cupcakes and set aside.

Vampire Cupcakes

  1. For vampire cupcakes, puree the raspberries and icing sugar together until smooth. Strain through a fine mesh sieve to remove the seeds. Use the raspberry sauce to splatter and decorate the cupcakes. Enjoy!

Spiderweb Cupcakes 

  1. Transfer the melted chocolate to a zip-top bag for spiderweb cupcakes and cut the corner off. Pipe spiderweb patterns onto parchment paper and allow them to cool and harden. Place a spider web on each cupcake. Enjoy!

Skeleton Cupcakes

  1. For skeleton cupcakes, dunk the top of the frosted cupcakes into the sprinkles to coat. Stick a lollypop stick into the centre of a cupcake and thread on three or four yogurt-covered pretzels. Draw a face on a marshmallow and stick it on the lollypop stick. Enjoy!
