Ingredients
2 tablespoons Panko breadcrumbs
2 tablespoons black sesame seeds
2 tablespoons nutritional yeast or grated Parmesan cheese
2 teaspoons smoked paprika
Pinch salt and pepper, to taste
2 frozen fish filets of cod, salmon, or halibut
1/2 pint, about 2 cups whole baby tomatoes
Olive oil, to drizzle
1/4 of a bunch (or enough for 2 people) asparagus, trimmed and cut in half
Directions
Preheat the oven to 400° F.
In a small bowl mix together breadcrumbs, black sesame seeds, nutritional yeast, paprika, salt, and pepper. Set aside.
Place frozen fish in the middle of a roasting pan or large ovenproof fry pan like a cast iron pan and scatter tomatoes around the fish. Lightly season all with salt and pepper. Place in oven for 10 minutes.
After 10 minutes remove from oven, scatter asparagus around the fish with the tomatoes, and pile breadcrumb mixture overtop both fish filets. You can also scatter any remaining crumble over vegetables. Drizzle olive oil over the top of the filets and vegetables. Season asparagus with salt and pepper. Place back in the oven for an additional 10 minutes or until the fish is cooked and flakes easily. Remove from oven and allow to cool before serving. Enjoy!
