Pink and lovely beet raita

Raita is a side that you’ll often see with North Indian food and it’s a blend of cooling yogurt and cumin powder and cucumber.
Ingredients
- 1 cup yogurt
- Water
- 2 medium beets, skinned, roasted and finely chopped
- 1/4 teaspoon cumin powder
- 1/2 teaspoon salt, to taste
- Pinch of red chili powder (optional)
- Mint leaves, for garnish
Directions
- Whisk yogurt to loosen it up. Stir in a little bit of water if needed to dilute the texture to make it a little runny.
- Combine beets, cumin powder, salt, red chili powder, and water to dilute. Mix together well.
- Chill before serving and add mint leaves to garnish. Serve as a dip or a side. Enjoy!
