Pink and lovely beet raita

Raita is a side that you’ll often see with North Indian food and it’s a blend of cooling yogurt and cumin powder and cucumber.

  • 1 cup yogurt
  • Water
  • 2 medium beets, skinned, roasted and finely chopped
  • 1/4 teaspoon cumin powder
  • 1/2 teaspoon salt, to taste
  • Pinch of red chili powder (optional)
  • Mint leaves, for garnish

  1. Whisk yogurt to loosen it up. Stir in a little bit of water if needed to dilute the texture to make it a little runny.
  2. Combine beets, cumin powder, salt, red chili powder, and water to dilute. Mix together well.
  3. Chill before serving and add mint leaves to garnish. Serve as a dip or a side. Enjoy!
