Chopped veg salad

This chopped veg Israeli salad will become your go-to side. It’s got Persian cucumbers, tomatoes, red onion, bell peppers and then some chopped parsley, chopped dill, olive oil, lemon juice, salt and pepper.

Ingredients
- 4 Persian cucumbers
- 3 medium tomatoes
- 1 small red onion
- 2 bell peppers
- 2 tablespoons finely chopped parsley
- 2 tablespoons finely chopped dill
- 1/3 cup olive oil
- 1 lemon, juiced
- Kosher salt to taste
Directions
- Chop all the veg into small chunks.
- Place in a bowl and add in the chopped parsley, dill, olive oil, freshly squeezed lemon juice and salt to taste. Toss and serve. Enjoy!
