Chopped veg salad

This chopped veg Israeli salad will become your go-to side. It’s got Persian cucumbers, tomatoes, red onion, bell peppers and then some chopped parsley, chopped dill, olive oil, lemon juice, salt and pepper.

Ingredients

  • 4 Persian cucumbers
  • 3 medium tomatoes
  • 1 small red onion
  • 2 bell peppers
  • 2 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped dill
  • 1/3 cup olive oil
  • 1 lemon, juiced
  • Kosher salt to taste

Directions

  1. Chop all the veg into small chunks.
  2. Place in a bowl and add in the chopped parsley, dill, olive oil, freshly squeezed lemon juice and salt to taste. Toss and serve. Enjoy!
