This chopped veg Israeli salad will become your go-to side. It’s got Persian cucumbers, tomatoes, red onion, bell peppers and then some chopped parsley, chopped dill, olive oil, lemon juice, salt and pepper.

Ingredients
4 Persian cucumbers
3 medium tomatoes
1 small red onion
2 bell peppers
2 tablespoons finely chopped parsley
2 tablespoons finely chopped dill
1/3 cup olive oil
1 lemon, juiced
Kosher salt to taste
Directions
Chop all the veg into small chunks.
Place in a bowl and add in the chopped parsley, dill, olive oil, freshly squeezed lemon juice and salt to taste. Toss and serve. Enjoy!
