Sweet and sour chicken with cauliflower fried rice

This recipe is full of flavour, and is super easy to make with minimal ingredients. Have you ever added freshly squeezed orange juice to your dinner meal? So yummy!

Ingredients
Chicken and Veggies
- 4 chicken breasts, diced
- 5-6 tablespoons tapioca / arrowroot flour
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 cup broccoli, small florets
- Starch mixture (2 tablespoons tapioca / arrowroot flour + 2-3 tablespoons water)
Homemade Sweet & Sour Sauce
- 3 tablespoons ketchup and/or tomato paste
- 3 tablespoons freshly squeezed orange juice
- 2 tablespoons light soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon white vinegar
Cauliflower Fried Rice
- 1 tablespoon sesame oil
- 1 package cauliflower rice, frozen
- 1 cup carrots, diced (+/- green peas)
- 1/4 cup green onion, diced
- 1-2 eggs, whisked
- Sesame seeds, to garnish
Directions
Chicken and Veggies
- Coat diced chicken breast with tapioca/arrowroot flour, garlic powder, and salt. Add to a frying pan with one tablespoon of oil until crispy.
- Once the chicken is cooked, remove the chicken and into the same frying pan cook veggies and starch mixture.
Sweet and Sour Sauce
- Combine ketchup or tomato paste, orange juice, soya sauce, sesame oil, honey or maple syrup, and white vinegar in a bowl.
- Add back chicken once the veggies are cooked and add the homemade sweet and sour sauce.
Cauliflower Rice
- Sautee cauliflower rice, carrots, peas, and green onions with one tablespoon of sesame oil.
- Push rice to the side and in the same pan add one to two whisked eggs and combine with the rice until fully cooked.
Assemble
- Plate sweet and sour chicken with cauliflower fried rice with a sprinkle of sesame seeds, and enjoy!
