Grilled red snapper wrapped in banana leaves

Grill this snapper right in a banana leaf for the ultimate tender seafood dish.

Ingredients

  • Whole red snapper fish cleaned and scaled
  • 1 cup diced tomatoes
  • 1 cup diced onion or shallots
  • 3-5 slices of ginger
  • 1oz of chopped cilantro
  • 1/2 lemon juice
  • 1 teaspoon butter
  • 1 oz oyster sauce

Directions

  1. Take whole fish and cut the bottom stomach side to make an area for stuffing. 
  2. Add tomatoes, onion, ginger and cilantro to the fish. 
  3. Cut slits on the side of the fish then add salt and black pepper and squeeze lemon to both sides. 
  4. Now brush the fish with oyster sauce and brush butter on a banana leaf. 
  5. Wrap the fish with banana leave the butter side on the fish then tie it with a string of banana leaves to keep sealed. 
  6. Grill fish in banana leaf for about 10 to 12 minutes per side you could also add foil so that leaves will not burn or add to the higher rack on bbq. Serve and enjoy!
