Panna cotta

Panna cotta makes not only a great dessert but can also be a breakfast or mid-afternoon snack. Panna cotta sounds fancy but you can make them in about 10 minutes. Traditionally an Italian sweetened flavored cream thickened with gelatine however they are very easy to make dairy-free as well. This is a Berry Panna Cotta made with a combination of coconut milk and almond milk. Very little sugar is involved in this recipe which makes it healthy enough for breakfast or a mid-afternoon snack, topped with granola, fresh berries etc.

Ingredients

  • 3/4 cup coconut milk
  • 3/4 cup heavy cream or unsweetened alternative milk beverage
  • 1/3 cup sugar
  • 2 teaspoons vanilla extract
  • 3 teaspoons unflavoured gelatin
  • 3 tablespoons cold water
  • 1 1/2 cups berry or mango purée, divided

Directions

  1. In a heavy-bottomed medium-size saucepot over medium-low heat, bring the coconut milk, cream, and sugar to a bare simmer, stirring until the sugar is dissolved. Remove from the heat and stir in the vanilla extract. 
  2. In a small bowl, sprinkle the gelatin into the cold water and let sit to bloom, for five minutes. 
  3. Whisk the gelatin mixture into the warmed milk until the gelatin dissolves. Whisk in a half cup of the fruit purée. 
  4. Pour into dessert ramekins, little glasses, or custard cups. Place in the fridge until set, a minimum of four hours depending on the size. Once set, portion out the remaining purée over top of each panna cotta. Cover and place back in the fridge. When set, serve and enjoy!
