Apple crumble cake

A little freezer tip: When baking with frozen apples, there's no need to thaw them first.

Ingredients
- 1 cup sour cream or 1/2 cup sour cream and 1/2 cup unsweetened yogurtt
- 2 eggs
- 1 1/4 cups sugar
- Pinch of salt (1/2 teaspoon)
- 2 cups all-purpose flour
- 1 tablespoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 cups chopped fresh or frozen baking apples
- 1/2 cup brown sugar
- 1/4 cup oats
- 1/8 cup all-purpose flour, for crumble
- 1 tablespoon cinnamon, for crumble
- 1 teaspoon nutmeg, for crumble
- 1/4 cup cold butter, grated
- 1/2 cup chopped fresh or frozen baking apples, for crumble
Directions
- Preheat the oven to 350°F and line or grease a nine-by-nine-inch square pan.
- In a large bowl whisk together sour cream, eggs, vanilla, salt, and sugar until combined.
- In another bowl, whisk flour with cinnamon, baking powder and baking soda.
- With a spatula, combine dry ingredients with wet ingredients until combined. Fold in apples and set aside.
- In a medium-sized bowl, stir together brown sugar, oats, flour, cinnamon and nutmeg. Fold in grated butter, then, using your fingers, make a crumble topping. Fold in chopped apples.
- Pour batter into prepared pan then sprinkle crumble topping evenly overtop. Bake for 45 to 50 minutes or until a toothpick comes out clean. Serve and enjoy!
