Miso bee-ies

Fermented soybeans in a cocktail? Turns out it’s terrific! This drink is a take on a classic Bee’s Knees with the addition of white miso paste for an earthy, salty-sweet, and floral character. Made with a New Western Dry Gin, you’ll also find notes of lavender and citrus.

Best Base Honey Syrup

  1. In a small saucepan, bring water to a simmer over medium-high heat. Add bee pollen and stir.
  2. Add the honey and turn the heat to low.
  3. Stir until honey is integrated and bee pollen is dissolved.
  4. Fine strain out all solids using a cheesecloth on a colander and let cool. Bottle and refrigerate for up to three months.

Cocktail 

  1. Combine miso paste, lemon juice, and syrup in a cocktail shaker.
  2. Use a bar spoon to whisk until well integrated, forming a paste.
  3. Add gin, enough ice to cover the liquid in the shaker, and more. Cover and shake vigorously for 10 to 15 seconds.
  4. Strain through a Hawthorne strainer into a five-oz coupe glass. No garnish is needed. Enjoy!
