Miso bee-ies

Fermented soybeans in a cocktail? Turns out it’s terrific! This drink is a take on a classic Bee’s Knees with the addition of white miso paste for an earthy, salty-sweet, and floral character. Made with a New Western Dry Gin, you’ll also find notes of lavender and citrus.

Best Base Honey Syrup
- In a small saucepan, bring water to a simmer over medium-high heat. Add bee pollen and stir.
- Add the honey and turn the heat to low.
- Stir until honey is integrated and bee pollen is dissolved.
- Fine strain out all solids using a cheesecloth on a colander and let cool. Bottle and refrigerate for up to three months.
Cocktail
- Combine miso paste, lemon juice, and syrup in a cocktail shaker.
- Use a bar spoon to whisk until well integrated, forming a paste.
- Add gin, enough ice to cover the liquid in the shaker, and more. Cover and shake vigorously for 10 to 15 seconds.
- Strain through a Hawthorne strainer into a five-oz coupe glass. No garnish is needed. Enjoy!
