This recipe is both deliciously easy to make and eat. It's great for using cereal and containers of peanut butter sitting around.

Ingredients
1 cup crunchy peanut butter
1/4 cup unsalted butter, softened
Pinch salt
1 cup icing sugar
2 cups rice crisps cereal
2 cups semi-sweet chocolate chips
2 tablespoons vegetable shortening
Directions
With a stand mixer fit with the paddle attachment or hand mixer, beat peanut butter, butter, salt and sugar on medium speed until thoroughly combined. Add in cereal and mix thoroughly on low speed.
Portion the mixture, using a rounded teaspoon, shape it into balls and place each onto a parchment-lined baking sheet. Refrigerate until firm, about 20 minutes.
Melt chocolate and shortening in a small saucepan over low heat, stirring constantly. Once melted, turn off the heat, and using toothpicks and a small spoon, start coating the balls. Hold over the pot, and spoon melted chocolate over each peanut butter ball. Refrigerate until firm. Store in an airtight container in the refrigerator or freeze for up to 3 months. Enjoy!
