Summer steak marinades

You won't believe how easy it is to make a smoky and tasty steak rub from items you already have in your pantry.

Ingredients

Steaks

  • 2 1.5-2 inch 12 oz steaks

Coffee Rubbed Steak Marinade

  • 1 tablespoon finely ground coffee beans (can use instant coffee as a substitute but fresh is preferred)
  • 2 teaspoons brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika

Ginger Miso Marinade

  • 1/4 cup miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon finely minced ginger
  • 2 tablespoons finely minced garlic
  • 1 tablespoon roasted sesame oil

Rosemary Garlic Marinade

  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/4 cup finely chopped rosemary
  • 1 tableespoon finely chopped thyme
  • 2 tablespoons finely minced garlic

Directions

  1. Whisk marinades to combine and then mix and coat the steaks. Cover with plastic wrap and let steaks marinade for at least one hour in room temperature or overnight in the fridge
  2. Let steaks come to room temperature 30 minutes before grilling.
  3. Place the steaks on the moderately high heat grill and cook until golden brown and slightly charred, four to five minutes. Turn the steaks over and continue to grill three to five minutes for medium-rare (an internal temperature of 135 degrees F), five to seven minutes for medium (140° F) or eight to 10 minutes for medium-well (150° F). 
  4. Rest for six to eight minutes before slicing.
