Ingredients
1 large watermelon
Juice of 2 limes
Juice of 2 lemons
1 bottle of ginger beer
Fresh mint, to garnish
Simple syrup, to taste (optional)
Lemon and lime slices, to garnish
Directions
Start by prepping the watermelon. Carefully cut off the top third of the melon, remove the flesh and add it to a blender. Discard the rind.
Slightly trim the bottom of the melon so it sits flat, being mindful not to cut too deep; you don’t want to expose the flesh. Scoop out the flesh from the watermelon and place it into the blender; you’ll need to do this in batches.
Blend and then strain through a fine-mesh sieve or a colander lined with cheesecloth. Discard the pulp. Add the watermelon juice to the hollowed-out melon along with the citrus juice, and ginger beer. Mix well. If you feel the punch needs a bit of sweetness, add a few splashes of simple syrup.
Cover and refrigerate the punch for a few hours or until nicely chilled.
Garnish with lemon and lime slices and fresh mint. Enjoy!
