Non-alcoholic watermelon punch

This punch is a delicious non-alcoholic option to serve up at your next summer gathering.

Ingredients
- 1 large watermelon
- Juice of 2 limes
- Juice of 2 lemons
- 1 bottle of ginger beer
- Fresh mint, to garnish
- Simple syrup, to taste (optional)
- Lemon and lime slices, to garnish
Directions
- Start by prepping the watermelon. Carefully cut off the top third of the melon, remove the flesh and add it to a blender. Discard the rind.
- Slightly trim the bottom of the melon so it sits flat, being mindful not to cut too deep; you don’t want to expose the flesh. Scoop out the flesh from the watermelon and place it into the blender; you’ll need to do this in batches.
- Blend and then strain through a fine-mesh sieve or a colander lined with cheesecloth. Discard the pulp. Add the watermelon juice to the hollowed-out melon along with the citrus juice, and ginger beer. Mix well. If you feel the punch needs a bit of sweetness, add a few splashes of simple syrup.
- Cover and refrigerate the punch for a few hours or until nicely chilled.
- Garnish with lemon and lime slices and fresh mint. Enjoy!
