Non-alcoholic watermelon punch

This punch is a delicious non-alcoholic option to serve up at your next summer gathering.

Ingredients

  • 1 large watermelon
  • Juice of 2 limes
  • Juice of 2 lemons
  • 1 bottle of ginger beer
  • Fresh mint, to garnish
  • Simple syrup, to taste (optional)
  • Lemon and lime slices, to garnish

Directions

  1. Start by prepping the watermelon. Carefully cut off the top third of the melon, remove the flesh and add it to a blender. Discard the rind.
  2. Slightly trim the bottom of the melon so it sits flat, being mindful not to cut too deep; you don’t want to expose the flesh. Scoop out the flesh from the watermelon and place it into the blender; you’ll need to do this in batches. 
  3. Blend and then strain through a fine-mesh sieve or a colander lined with cheesecloth. Discard the pulp. Add the watermelon juice to the hollowed-out melon along with the citrus juice, and ginger beer. Mix well. If you feel the punch needs a bit of sweetness, add a few splashes of simple syrup.
  4. Cover and refrigerate the punch for a few hours or until nicely chilled.
  5. Garnish with lemon and lime slices and fresh mint. Enjoy!
