Pancake Tacos

These fun and easy pancake tacos are perfect for breakfast or brunch. They are also a great way to get kids involved in the kitchen.

 

Ingredients

  • 1/2 cup white flour
  • 1/2 cup whole wheat flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cup milk
  • 1 egg
  • 1 tbsp oil

Directions

  1. Heat a greased non-stick pan over medium heat.
  2. Mix dry ingredients.
  3. Whisk egg and oil into milk and add all at once to dry ingredients. Whisk until combined.
  4. Pour 1/4 cup of batter at a time into pan. When bubbly, flip and cook other side. Do this until all of the batter is used.
  5. Serve with pancake taco fillings! My favourites are: Peanut Butter and Banana, Berries and yogurt, Scrambled Eggs and Avocado…let your kids get creative!
