These fun and easy pancake tacos are perfect for breakfast or brunch. They are also a great way to get kids involved in the kitchen.
Ingredients
1/2 cup white flour
1/2 cup whole wheat flour
1 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 1/4 cup milk
1 egg
1 tbsp oil
Directions
Heat a greased non-stick pan over medium heat.
Mix dry ingredients.
Whisk egg and oil into milk and add all at once to dry ingredients. Whisk until combined.
Pour 1/4 cup of batter at a time into pan. When bubbly, flip and cook other side. Do this until all of the batter is used.
Serve with pancake taco fillings! My favourites are: Peanut Butter and Banana, Berries and yogurt, Scrambled Eggs and Avocado…let your kids get creative!
