Pancake Tacos

These fun and easy pancake tacos are perfect for breakfast or brunch. They are also a great way to get kids involved in the kitchen.
Ingredients
- 1/2 cup white flour
- 1/2 cup whole wheat flour
- 1 tbsp sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 1/4 cup milk
- 1 egg
- 1 tbsp oil
Directions
- Heat a greased non-stick pan over medium heat.
- Mix dry ingredients.
- Whisk egg and oil into milk and add all at once to dry ingredients. Whisk until combined.
- Pour 1/4 cup of batter at a time into pan. When bubbly, flip and cook other side. Do this until all of the batter is used.
- Serve with pancake taco fillings! My favourites are: Peanut Butter and Banana, Berries and yogurt, Scrambled Eggs and Avocado…let your kids get creative!
