No Bake Key Lime Cheesecake

Tangy, creamy and crunchy at the bottom, this no bake key lime cheesecake dessert is one you can whip up in no time



  • 4–6 crunchy oatmeal cookies, graham crackers, or vanilla cream filled cookies
  • 1 cup brick style cream cheese, room temperature
  • 1 lime, zested and juiced
  • ¼ cup sugar
  • ½ cup whipping cream


  1. Set out four small glass cups or jars.
  2. Add the cookies to a zip top bag and use a rolling pin to bash them up a bit. If you want the crust on the bottom, divide the crumbs into the small glass cups or jars. If you’d like the crust to be more of a crumble on top, save the cookie crumbs for later.
  3. In a small bowl, beat together the cream cheese, lime zest, lime juice, and sugar until smooth.
  4. In a separate bowl, whip the cream to stiff peaks.
  5. Stir about half of the whipped cream into the cream cheese mixture just until combined. Gently fold in the remaining whipped cream and divide the mixture into the small glass cups or jars. If you saved the cookie crumbs, scatter them over now.
  6. If you’d like, add a bit more lime zest to the top of the cheesecakes and enjoy immediately or chill in the fridge for later.
