These savoury mushroom skewers are a great snack or veggie main.

Ingredients
3 tablespoons tamarind paste
3 tablespoons oil
3 tablespoons tamari
2 teaspoons honey
2 teaspoons toasted, whole coriander seeds
1 teaspoon onion powder
1/2 teaspoon garlic powder
400g oyster mushrooms
Toasted sesame seeds and sliced green onion for garnish
Directions
Add the tamarind paste to a large bowl and whisk in 3 tablespoons of warm water until you have a thick paste. Stir in the oil, tamari, coriander seeds, onion powder and garlic powder.
Remove any excess dirt from the oyster mushrooms. If they are in large clusters, separate them (including the stem) into individual caps.
Add the mushrooms to the tamarind marinade and toss to coat each mushroom. Let the mushrooms marinate for 30 minutes.
Thread the mushrooms onto the skewers.
Heat an indoor grill to medium-high and brush with oil. Once the grill is nice and hot, add the skewers. Cook, turning occasionally, for about 15 minutes until the edges of the mushrooms are caramelized and the stems are tender. Remove from the grill and garnish with sesame seeds and green onion; serve and enjoy!
