Cinnamon Roll for One

Cinnamon rolls are my go-to comfort food. However, the whole process of making them can be a bit discouraging as it doesn’t instantly satisfy that craving- you have to make the dough, let it be proof, then bake, etc. This recipe is for one and requires no proofing time at all. The self-raising flour does the work for you. There is no yeast, no resting time and no kneading required.

Ingredients

  • 1/4 cup self-raising flour
  • 3 tablespoons Greek, or thick, yogurt
  • 2 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon powdered sugar

Directions

  1. Preheat the oven to 350F. Line a baking dish or tray with parchment paper and set aside.
  2. In a small bowl, combine the granulated sugar and ground cinnamon, mixing well together. Set aside
  3. Add your flour with the yogurt in a mixing bowl and mix well. Then, using your hands, form into a ball of dough.
  4. Lightly flour a kitchen surface. Add a sprinkle of flour onto the dough ball and transfer it to the floured surface. Form the dough into a rectangular shape, and roll it out approximately 3 inches by 6 inches using a rolling pin.
  5. Brush the exposed side of the dough with the melted butter until covered. Sprinkle with the cinnamon sugar mixture. From the short end of the dough, slowly roll it up completely.
  6. Place the cinnamon roll onto the lined pan or dish. Press down onto it and brush with either water, milk, or oil. Bake for 15 to 17 minutes or until golden brown on top.
  7. Remove from the oven and let cool for 5 minutes before glazing the tops. To prepare the glaze, mix the powdered sugar with either milk, yogurt or water until the desired consistency is reached and drizzle or spoon the glaze over. Enjoy!
