Mini Apple Crisp

Some great add-ins to this are ginger or orange zest mixed into the apple mixture. You can tweak the spices to your preference.

Ingredients
Filling
- 1 large apple peeled and thinly sliced (about 1 cup)
- Juice from 1/2 lemon
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/2 tablespoon brown sugar
- 1/2 tablespoon All-purpose flour
Topping
- 2 tablespoons room temperature butter, cubed
- 2 tablespoons brown sugar
- 1 tablespoon all-purpose flour
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon nutmeg
- 3 tablespoons large rolled oats
Directions
Filling
- Make the filling by placing the apple slices in a medium bowl and toss with the lemon juice.
- Add the cinnamon, nutmeg, brown sugar and flour and toss to combine. Set aside.
Topping
- Make the crisp topping by placing the diced butter in another bowl.
- Add the brown sugar, flour, cinnamon, nutmeg and oats and combine with a fork until crumbly.
Assemble and Serve
- Assemble the crisp by placing half the apple slices in a large mug or small ramekin. Dot half the crisp mixture on top. Layer the remaining apple slices on top of that and finish with the remaining crisp topping.
- Place in the microwave and cook for 2-3 minutes until the apples are soft and the crisp topping has melted and become crispy at the edges.
- Serve warm and enjoy! Try it with freshly whipped cream or vanilla ice cream.
