Spicy Lasagna Soup

Take your favourite Italian comfort food and turn it into a delicious spicy soup. 



  • 3 tablespoons olive oil
  • 1 lb spicy Italian sausage, casing removed
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1 teaspoon red chili flakes
  • 2 tablespoons tomato paste
  • 3 cups pasta sauce (marinara)
  • 8 cups chicken broth
  • 2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 4 sprigs fresh thyme
  • 2 teaspoons dried basil
  • Kosher salt to taste
  • Black pepper to taste
  • 10 dry lasagna noodles, broken into 1-2 inch pieces
  • 2 cups chopped spinach
  • 1 cup ricotta
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan
  • Fresh basil to garnish


  1. To a large pot on medium heat, add olive oil. Once hot, add the sausage and cook, breaking the sausage into crumbles.
  2. Once the sausage has browned, add the onion, garlic, and chilli flakes, and saute until the onions are translucent and soft. 
  3. Add the tomato paste and stir it into the onions, cooking for two to three minutes. Then add the pasta sauce, chicken broth, garlic powder, oregano, thyme, and dried basil.—season with kosher salt and black pepper to taste.
  4. Increase the heat to high and bring to a boil. Then, reduce it to a simmer, and add the lasagna noodles. Cook the noodles until they’re tender. Then, stir in the chopped spinach. 
  5. Mix the ricotta, mozzarella and parmesan until well combined.
  6. Ladle the soup into bowls and top with a spoonful of the cheese mixture and some torn basil. Enjoy!
