Avocado chocolate pudding
Ingredients
- 4 large, ripe avocados
- 2/3 cup (160 milliliters) cocoa powder
- 2/3 cup (160 milliliters) honey
- 1/2 cup (120 milliliters) milk
- 1/2 teaspoon (2.5 milliliters) vanilla extract
- 1/8 teaspoon (0.5 milliliters) salt
- 1/2 cup toasted sweetened shredded coconut, to garnish
Directions
- Remove pit from avocados and scoop flesh into a blender. Add cocoa powder, honey, milk, vanilla and salt to the blender.
- Blitz until thick and creamy, adjusting thickness with more milk if needed.
- Pour into four small serving dishes. Divide toasted coconut among four servings.
