Bahama pineapple coconut daiquiri


  • 2 cups (500 mL) ice
  • 1 cup (250 mL) cream of coconut
  • 1 cup (250 mL) pineapple juice
  • 1 oz (30 mL) freshly squeezed lime juice
  • 2 oz (60 mL) Caribbean spiced or dark rum
  • 1/3 cup (80 mL) simple syrup
  • Pineapple wedges for garnishing
  • Lime slices for garnishing
  • Edible flowers for garnishing


  1. Add ice, cream of coconut, pineapple and lime juice, rum to a high-powered blender and blend until smooth.
  2. Add simple syrup to taste, pulse.
  3. Pour into two cocktail glasses, garnish and serve.
