Big bad beer cheese

A unique recipe for the perfect summer party. 



  • 340 grams extra sharp shredded cheddar cheese,
  • 1/2 cup soft whipped cream cheese
  • 1 1/2 tablespoon cornstarch
  • 1 bottle honey brown beer
  • 1/2 cup heavy cream
  • 1 clove garlic smashed
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce (your favourite kind will do!)
  • 1 tablespoon finely chopped chives
  • 1/4 teaspoon salt


  1. Add the beer, cream, garlic, hot sauce, mustard, and Worcestershire sauce into a pot on medium heat. Bring to a gentle simmer while whisking.
  2. Toss the cheddar and cornstarch together in a separate bowl then whisk into the simmering liquid.
  3. When the cheddar has completely melted, whisk in the cream cheese and season with salt if needed. Add the chives and serve!
