Bottom-of-the-jar fresh salad and dressing

Delicious side salad from pantry leftovers.

Ingredients
For the salad:
- 1 head romaine lettuce (washed)
- 1/2 bag radishes, thinly sliced
- 1 English cucumber, thinly sliced
- 1 avocado, diced
For the dressing:
- 1/4 cup pickle juice (from jar of Gherkins)
- 1/8 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and black pepper to taste
Directions
- In a large glass bowl, combine all ingredients for dressing, whisking together vigorously. Set aside once combined.
- Cut romaine lettuce into bite-size pieces, and thinly slice cucumber and radishes.
- Cut, peel, and dice avocado.
- Add all salad ingredients to large bowl with dressing already in it. Toss well to coat salad,
