Buddy's green salad

Jamie Oliver is preparing dinner tonight with this delicious green salad made with crunchy apples and cucumbers, fresh herbs and flavourful olives! Feel free to embellish further with other gorgeous green foods like chunks of ripe avocado, fresh raw peas or broad beans, speed-peeled asparagus or sliced pear.

Ingredients

Salad Dressing

  • 1 lemon, juiced
  • 1 tbsp balsamic vinegar
  • 3 tbps olive oil
  • Sea salt and black pepper

Salad

  • 1 cucumber, chopped
  • 1 apple, diced
  • 2 bags of little gem lettuce
  • 6 green olives
  • 1 bunch of soft herbs (30 g) such as tarragon, chives, dill, mint or basil

Directions

For the Dressing

  1. Squeeze the lemon juice into a clean jam jar, add the balsamic and three times as much extra virgin olive oil, then a pinch of sea salt and black pepper, and pop the lid on. Set aside for serving. 

For the Salad

  1. Use a speed-peeler to peel the cucumber, halve it lengthways, use a teaspoon to remove the seedy core, then slice two cm thick, using a crinkle-cut knife, if you’ve got one. 
  2. Chop the apple into chunky matchsticks. 
  3. Trim the lettuce bases and click apart the leaves. 
  4. Squash and destone the olives, tearing up the flesh. 
  5. Finely chop the herb leaves. 
  6. Pile it all into a large serving bowl, then give the dressing a good shake and drizzle two tablespoons over the salad, gently tossing it together with your fingertips. TIP: The leftover jam jar dressing will keep happily in the fridge for up to a week.
  7. Feel free to embellish further with other gorgeous green foods like chunks of ripe avocado, fresh raw peas or broad beans, speed-peeled asparagus or sliced pear. Enjoy!
