Buttermilk and marshmallow fried chicken
Ingredients
- 2 cups marshmallows, melted
- 3 cups buttermilk
- 1 egg
- 454 grams chicken breasts, sliced into strips
- 3 cups flour
- 1 cup bread crumbs
- 1 litre canola oil or any neutral oil
Directions
- In a pot, melt the marshmallows with the buttermilk until fully incorporated.
- Let cool until slightly warm and beat in an egg - this will help in the frying process.
- While it’s cooling, mix together the bread crumbs and the flour and slice your chicken into strips.
- Take chicken and put in the marshmallow milk mixture and toss until all coated. You can even let it sit in the mixture for up to an hour.
- Then in batches, coat the chicken in the flour/bread crumb mixture.
- Once coated, in batches fry in a deep pot of canola oil for six to eight minutes.
- When cooked all the way through, toss the chicken in salt.
- Serve hot with any of your favourite sides!
