Buttermilk and marshmallow fried chicken

Ingredients
2 cups marshmallows, melted
3 cups buttermilk
1 egg
454 grams chicken breasts, sliced into strips
3 cups flour
1 cup bread crumbs
1 litre canola oil or any neutral oil
Directions
In a pot, melt the marshmallows with the buttermilk until fully incorporated.
Let cool until slightly warm and beat in an egg - this will help in the frying process.
While it’s cooling, mix together the bread crumbs and the flour and slice your chicken into strips.
Take chicken and put in the marshmallow milk mixture and toss until all coated. You can even let it sit in the mixture for up to an hour.
Then in batches, coat the chicken in the flour/bread crumb mixture.
Once coated, in batches fry in a deep pot of canola oil for six to eight minutes.
When cooked all the way through, toss the chicken in salt.
Serve hot with any of your favourite sides!
