SERVES
4
Ingredients
16 pieces of raw tiger shrimp
Olive oil and salt, to season boiling water
10 oz uncooked penne
1/2 cup unsalted butter
2 tablespoons chopped garlic.
Salt and pepper, to season shrimp
1 1/2 tablespoons Cajun spice
1 cup red onion, sliced
1 cup red and orange peppers, thinly sliced
1 1/2 cups 35% cream
1/4 cup parsley, chopped
3/4 cup Parmesan cheese, grated, plus more for serving
Directions
Rinse and remove the tails of all shrimp and place in a bowl.
Heat up a pot with boiling water. Add salt and olive oil. When water comes to a boil add dry noodles and cook for six to seven minutes. Remove from pot and cool.
Heat up a large skillet on medium heat. Add butter and garlic to the skillet. When butter is half melted add shrimp, salt and pepper.
When shrimp is 50 percent cooked add Cajun spice, onions and peppers and let cook for three more minutes.
Add cream, Parmesan cheese, chopped parsley and a bit more salt and pepper. Let the sauce thicken up for two to three minutes.
Turn on low and add cooked pasta to the skillet and mix until noodles are completely coated. TIP: if the sauce is too thick add a little bit of water accordingly.
Remove from stove and garnish with fresh grated Parmesan cheese. TIP: This is best to serve right away as the sauce will thicken and cheese will harden. Enjoy!
